The difference

An unusual head-to-head, in that both varieties come from Ed Currie at PuckerButt in South Carolina, and the second was bred to beat the first. The Carolina Reaper held the Guinness title for a decade from 2013; Pepper X took it in October 2023.

The number worth comparing is the average, not the peak. Pepper X was recognised on an average across a batch of pods rather than one exceptional fruit, and the Reaper's certified average — measured at Winthrop University — is well below the maximum usually quoted for it. Compare averages and the gap is real but smaller than the headline figures suggest; compare a certified average against an unconfirmed peak, as most write-ups do, and you get a nonsense.

In practice, past about a million Scoville units the differences that matter are not intensity but timing: how fast the heat arrives, how long it stays, and whether there is any flavour underneath. The Reaper has genuine fruit under the burn, which is why it ended up in sauces rather than only in dares. Pepper X is reported to run for hours.

Can you substitute one for the other?

Yes, in the sense that a fraction of either does the same job. There is no culinary reason to choose between them — at this end of the scale you are dosing rather than cooking, and the Reaper is far easier to buy.
