About this variety
Thunder Cacho is a Danish hybrid combining Thunder Mountain Longhorn and Cacho Negro, creating what its breeder called 'the meeting of two mountains'. Long, slender, gently twisted pods ripen to a deep mahogany brown-red with a polished finish. The variety excels at drying, developing smoky, complex notes of dried fruit and cocoa that surpass its fresh profile.
History & lineage
Thunder Cacho is a Danish hybrid developed in the 2010s, crossing two notable cultivars from very different ends of the chilli world: the Chinese Thunder Mountain Longhorn (a long twisted Chinese cooking pepper) and the Cacho Negro (a dark-pod Argentine cultivar). The cross was developed by Danish chilli breeder Frutalia, who described the variety as "the meeting of two mountains" - a reference to both parent varieties' mountainous origin regions.
The Danish chilli breeding scene has emerged in recent decades as a small but innovative force in the global chilli world. Denmark's short growing season and cool climate have favoured baccatum and annuum crosses over chinense superhots, and Danish breeders have produced several notable cultivars suited to northern European cultivation. Thunder Cacho fits this pattern - a moderate-heat annuum cross that performs well in cooler conditions where superhots struggle.
The variety's defining culinary character is its remarkable drying performance. Where the fresh Thunder Cacho offers reasonable but unexceptional flavour, the dried form develops complex smoky, dried-fruit, and cocoa notes that significantly exceed the fresh profile. This drying-superiority is unusual - most chillies offer their best flavour fresh - and has made Thunder Cacho a favourite among growers focused on dried chilli production rather than fresh use.
The distinctive twisted, polished mahogany-brown ripening colour gives Thunder Cacho strong visual appeal alongside its flavour. The pods cure to a dark glossy finish that retains both colour and gloss after drying, making the variety attractive for both decorative ristras and commercial dried-chilli presentation. The Danish origins remain primarily a niche curiosity in the global chilli world, but Thunder Cacho has earned recognition among specialist dried-chilli enthusiasts as one of the more interesting recent cultivars.

Best suited for drying into flakes or powder where its smoky, fruity character develops fully. Also works well in slow-cooked dishes, stews, and mole-style sauces where moderate heat and depth are desired.
