The Serrano Tampiqueño is a regional landrace from Tamaulipas, on Mexico's Gulf coast - one of several distinct serrano strains that developed in different Mexican states. Tamaulipas's subtropical coastal climate produced a variety with shorter days to maturity and better tolerance for heat and humidity than highland serranos. The broader serrano family takes its name from the Spanish "sierra" (mountain), referencing the original cultivation in the mountainous regions of Hidalgo and Puebla in central Mexico. Tampiqueño - "from Tampico", the Tamaulipas port city - represents the lowland coastal adaptation of the variety, selected over generations for the warmer, more humid Gulf climate. In Mexican cooking, serranos are valued for their assertive heat and crisp, bright flavour - hotter and more vegetal than jalapeños, perfect for fresh salsas where they're used raw or briefly cooked. Salsa verde made with raw serrano, tomatillo, onion, garlic, and coriander is one of the foundational Mexican condiments, and Tampiqueño serranos are the regional preference for this preparation throughout the Gulf coast states.
